Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Position the oven rack in the center.
  2. Place the pork tenderloin between two sheets of plastic wrap and pound to about ¾ inch thickness.
  3. In a skillet, heat olive oil and sauté chopped onions for 3-4 minutes. Add minced garlic and spinach and cook until wilted.
  4. Use 14 strips of bacon to create a weave pattern on a clean surface.
  5. Lay the pound tenderloin on the bacon weave and spread the filling, leaving an inch around the edges.
  6. Roll the pork tightly in the bacon weave and secure with toothpicks.
  7. Place the rolled tenderloin in a baking dish, season with salt and pepper, and bake for approximately 75 minutes.
  8. Sauté bell peppers and broccoli in a skillet for 5-7 minutes, then add fresh tomatoes just before serving.
  9. Let the bacon-wrapped tenderloin rest for at least 10 minutes before slicing and serving with vegetables.
