Step-by-Step Instructions
- Preheat your oven to 350°F (175°C). Position the oven rack in the center.
- Place the pork tenderloin between two sheets of plastic wrap and pound to about ¾ inch thickness.
- In a skillet, heat olive oil and sauté chopped onions for 3-4 minutes. Add minced garlic and spinach and cook until wilted.
- Use 14 strips of bacon to create a weave pattern on a clean surface.
- Lay the pound tenderloin on the bacon weave and spread the filling, leaving an inch around the edges.
- Roll the pork tightly in the bacon weave and secure with toothpicks.
- Place the rolled tenderloin in a baking dish, season with salt and pepper, and bake for approximately 75 minutes.
- Sauté bell peppers and broccoli in a skillet for 5-7 minutes, then add fresh tomatoes just before serving.
- Let the bacon-wrapped tenderloin rest for at least 10 minutes before slicing and serving with vegetables.

Notes
Ensure the bacon strips are tightly woven for a crispy outer layer. Allow the pork to rest for juices to redistribute and maintain moisture.
