Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and spray a baking sheet with nonstick cooking spray.
  2. In a medium bowl, whisk together flour, baking powder, salt, and cinnamon.
  3. In a larger bowl, combine melted butter and granulated sugar, then whisk in egg, vanilla extract, and applesauce.
  4. Gently fold the dry ingredients into the wet ingredients and then fold in the diced apples.
  5. Scoop out portions of batter onto the baking sheet, spacing them a few inches apart.
  6. Bake for 10 minutes until puffed and lightly golden.
  7. Meanwhile, whisk together powdered sugar and apple cider until a thin glaze forms.
  8. Brush warm fritters with glaze, then broil for 2-4 minutes until caramelized.
  9. Allow to cool for 15 minutes before serving.
