- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the thawed puff pastry on a floured surface to about 12 inches in diameter.
- Place the brie in the center of the pastry, leave a 2-inch border, and top with blackberries and thyme. Drizzle with honey and sprinkle salt.
- Fold the pastry edges over the filling creating a pleated border. Brush edges with beaten egg.
- Bake for 20 to 25 minutes until golden brown and puffed. Keep an eye on it while it bakes.
- Let cool for 5 to 10 minutes before serving; drizzle with honey and sprinkle thyme before serving.
