Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry on a floured surface to about 12 inches in diameter.
  3. Place the brie in the center of the pastry, leave a 2-inch border, and top with blackberries and thyme. Drizzle with honey and sprinkle salt.
  4. Fold the pastry edges over the filling creating a pleated border. Brush edges with beaten egg.
  5. Bake for 20 to 25 minutes until golden brown and puffed. Keep an eye on it while it bakes.
  6. Let cool for 5 to 10 minutes before serving; drizzle with honey and sprinkle thyme before serving.
