  • 1 lb Salmon Fresh or canned works
  • 1 cup Gluten-Free Breadcrumbs
  • 1/4 cup Parmesan Cheese Optional for dairy-free
  • 1 large Egg Can use flax egg for vegan
  • 1/4 cup Fresh Parsley Chopped, can substitute with cilantro
  • 2 cloves Minced Garlic Fresh, or substitute with garlic powder
  • 1 tbsp Lemon Juice Can substitute with lime juice
  • 1 tsp Salt
  • 1 tsp Pepper
For the Avocado Sauce
  • 1 ripe Avocado Hass recommended
  • 1/2 cup Greek Yogurt Can swap for non-dairy yogurt
  • 1 tbsp Lime Juice Can use lemon juice
  • 1 clove Additional Garlic Optional for extra flavor

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together fresh or canned salmon, gluten-free breadcrumbs, Parmesan cheese, beaten egg, parsley, garlic, lemon juice, salt, and pepper until just combined.
  3. Shape the mixture into meatballs and arrange on the baking sheet.
  4. Bake for 15-18 minutes until golden brown and firm to the touch.
  5. While baking, blend avocado, Greek yogurt, lime juice, and optional garlic until smooth.
  6. Serve warm with avocado sauce on the side.
