For the Salmon
  • 4 fillets Salmon Frozen salmon works if fully thawed.
  • 2 tablespoons Olive Oil Can substitute with avocado oil.
For the Spinach Mixture
  • 4 cups Fresh Spinach Thawed and drained frozen spinach can be used.
  • 3 cloves Minced Garlic Fresh is best, but garlic powder can work.
For the Topping
  • 1 cup Mozzarella Cheese Can be replaced with feta or goat cheese.
  • 1 teaspoon Dried Oregano Italian seasoning can serve as a substitute.
For Seasoning
  • to taste Salt
  • to taste Pepper

Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add chopped spinach and cook for 2-3 minutes until wilted. Remove from heat.
  4. Place salmon fillets skin-side down in a baking dish. Season with salt, pepper, and dried oregano.
  5. Layer sautéed spinach over each fillet and top with shredded mozzarella cheese.
  6. Bake in the preheated oven for 15-20 minutes until salmon flakes easily and cheese is bubbly.
