- Preheat your oven to 400°F (200°C).
- Slice the chicken breasts in half horizontally, season with salt, pepper, and garlic powder, and arrange in a greased baking dish.
- Beat together cream cheese and heavy cream until smooth, then fold in onion powder, paprika, Italian seasoning, and grated Parmesan cheese. Mix in half of the shredded mozzarella.
- Pour the creamy sauce evenly over the chicken, drizzle the oil from the sun-dried tomatoes, and scatter the chopped sun-dried tomatoes over the top.
- Cover with aluminum foil and bake for 20 minutes.
- Remove foil, add chopped spinach and remaining mozzarella on top.
- Bake uncovered for an additional 10 minutes until cheese is bubbling and golden.
- Let it rest for 5 minutes before serving.
