Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Slice the chicken breasts in half horizontally, season with salt, pepper, and garlic powder, and arrange in a greased baking dish.
  3. Beat together cream cheese and heavy cream until smooth, then fold in onion powder, paprika, Italian seasoning, and grated Parmesan cheese. Mix in half of the shredded mozzarella.
  4. Pour the creamy sauce evenly over the chicken, drizzle the oil from the sun-dried tomatoes, and scatter the chopped sun-dried tomatoes over the top.
  5. Cover with aluminum foil and bake for 20 minutes.
  6. Remove foil, add chopped spinach and remaining mozzarella on top.
  7. Bake uncovered for an additional 10 minutes until cheese is bubbling and golden.
  8. Let it rest for 5 minutes before serving.
