  • 1/4 cup Aged Balsamic Regular balsamic can be used if necessary
For the Toppings
  • 1/2 cup Parmigiano Reggiano Or use pecorino or nutritional yeast for vegan
  • 1 cup Plain Panko Breadcrumbs Gluten-free options available
  • 1 tbsp Extra Virgin Olive Oil For toasting breadcrumbs
For the Final Touch
  • 1 cup Pasta Water Reserved to adjust sauce consistency

Method
 

Step-by-Step Instructions
  1. Sauté the garlic in olive oil until fragrant and golden.
  2. Toast panko breadcrumbs in the same pan until golden brown.
  3. Caramelize sliced red pearl onions in butter for 30-40 minutes.
  4. Cook tagliatelle in salted water until al dente and reserve pasta water.
  5. Add minced garlic, thyme, and salt to caramelized onions and sauté.
  6. Deglaze pan with white wine and simmer until absorbed.
  7. Incorporate aged balsamic vinegar and mix well.
  8. Combine the cooked tagliatelle with the sauce, adding pasta water to desired consistency.
  9. Finish with grated Parmigiano Reggiano and serve topped with breadcrumbs.
