Ingredients
  

For the Mushroom Filling
  • 16 oz Mushroom Caps Choose large, firm mushrooms
  • 8 oz Boursin Cheese Can substitute with cream cheese
  • 2 tbsp Butter For sautéing mushroom stems
  • 1 medium Onion Diced
  • 1 tbsp Thyme Fresh, chopped
For the Topping
  • 1 cup Panko Breadcrumbs Can substitute with regular breadcrumbs
  • 1/2 cup Parmesan Cheese Grated, can use nutritional yeast for vegan
For Baking
  • 2 tbsp Olive Oil For brushing mushroom caps
  • 2 tbsp Parsley Chopped, for garnish

Method
 

Cooking Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Remove the stems from the mushroom caps and mince them finely.
  3. Melt butter in a skillet over medium heat, add minced mushroom stems, onion, and thyme. Sauté for 5-7 minutes.
  4. Combine panko breadcrumbs, Parmesan cheese, and parsley in a bowl for the topping.
  5. Mix cooled sautéed mixture with Boursin cheese and half of the breadcrumb mixture.
  6. Brush mushroom caps with olive oil and fill them with the Boursin mixture.
  7. Coat stuffed mushrooms with the remaining panko mixture.
  8. Arrange on a baking sheet and bake for 20 minutes until tender and golden brown.
