  • 2 cups White Beans canned beans save time
  • 1/2 cup Buffalo Sauce adjust the heat to your taste
  • 1 teaspoon Cumin provides an earthy note
  • 1 teaspoon Garlic Powder for more punch, fresh garlic is an excellent substitute
For the Tortillas
  • 8 pieces Tortillas corn or flour works great based on preferences
For the Toppings
  • 1 medium Avocado swap with guacamole if desired
  • 2 cups Shredded Lettuce any leafy green can be used as a substitute
  • 1 cup Diced Tomatoes optional but highly recommended
  • 1/4 cup Fresh Cilantro feel free to skip if not liked

Method
 

Taco Preparation
  1. In a medium skillet over medium heat, combine white beans, buffalo sauce, cumin, and garlic powder. Stir well and heat for about 5–7 minutes until warmed through.
  2. While the filling is heating, warm your tortillas over medium-low heat for about 1–2 minutes on each side or microwave for 20–30 seconds wrapped in a damp paper towel.
  3. Take a warm tortilla and scoop the buffalo bean mixture into the center. Fill sufficiently and repeat with remaining tortillas.
  4. Slice fresh avocado and layer it on the filling, add shredded lettuce, diced tomatoes, and sprinkle cilantro on top.
  5. Serve warm with additional buffalo sauce on the side and enjoy!
