Ingredients

For the Pasta Base
  • 14 oz Bow Tie Pasta Substitute with gluten-free pasta or quinoa for a gluten-free version.
For the Veggies
  • 7 oz Cherry Tomatoes Leftover grape tomatoes can work as a substitute.
  • 1 medium Cucumber Use zucchini or bell pepper for variation.
  • ½ large Green Bell Pepper Red or yellow bell peppers are good substitutes.
  • ½ large Red Bell Pepper Can be replaced with additional green bell pepper.
  • ½ small Red Onion Sweet onions or scallions can be used instead.
  • 1 small can Black Olives Omit if undesired or substitute with green olives.
For the Dressing
  • 1 cup Zesty Italian Dressing Make your own with olive oil, vinegar, and Italian herbs for a homemade option.
  • 3 tablespoons Parmesan Cheese Use nutritional yeast for a vegan alternative.

Equipment

  • large pot
  • colander
  • mixing bowl
  • whisk
  • cutting board
  • sharp knife
  • spatula

Method

Step-by-Step Instructions
  1. Begin by bringing a large pot of salted water to a rolling boil over high heat. Add the bow tie pasta and cook it for about 8 to 10 minutes, or until it reaches an al dente firmness. Once done, drain the pasta in a colander and rinse it under cold water to stop the cooking process and cool it down quickly.
  2. While the pasta cools, take a cutting board and sharp knife to chop the cherry tomatoes, cucumber, green and red bell peppers, and red onion into bite-sized pieces. Place these vibrant veggies along with the black olives into a large mixing bowl.
  3. In a separate bowl, combine the zesty Italian dressing with the grated Parmesan cheese. Using a whisk, blend the ingredients until they are smooth and well-integrated.
  4. Add the cooled bow tie pasta to the mixing bowl with the chopped vegetables. Slowly pour the prepared dressing mixture over the pasta and veggies, ensuring an even coating. Gently toss everything together using a spatula or salad tongs.
  5. Cover the bowl with plastic wrap and place the California Pasta Salad in the refrigerator for at least 30 minutes.
