  • 2 cups dry macaroni whole wheat or chickpea pasta recommended

  • 1 lb lean ground beef substitute with ground turkey or chickpeas for lighter option
For the Vegetables
  • 1 medium chopped white onion
  • 3 cloves minced garlic fresh garlic preferred
  • 2 cups bell peppers mix of red, green, and yellow recommended
For the Creamy Base
  • 2 tablespoons butter olive oil can be used instead
  • 8 oz light cream cheese regular cream cheese for a richer flavor
  • 1 cup shredded mozzarella can substitute with favorite melting cheese
  • 4 light cheese slices any good melting cheese recommended
For the Seasoning
  • 1 teaspoon salt
  • 1 teaspoon pepper to taste
  • 1 teaspoon paprika to taste
  • 1/2 teaspoon chili flakes to taste
For the Garnish
  • 1/4 cup fresh parsley chopped

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil and add macaroni. Cook for 8-10 min until al dente. Reserve 125ml of pasta water before draining.
  2. In a deep skillet, melt butter over medium heat. Add garlic, onion, and bell peppers; sauté for 4-5 min until tender.
  3. Crumble ground beef into skillet, cook for 5-7 min until browned. Drain excess fat, season with salt, pepper, paprika, and chili flakes.
  4. Lower heat, add cream cheese, mozzarella, and cheese slices; stir for 3-4 min until melted and creamy.
  5. Mix cooked macaroni into skillet, add reserved pasta water, and toss until coated.
