Ingredients
  

For the Casserole
  • 1 lb lean ground beef can substitute with ground turkey or chicken
  • 1 small onion, diced can replace with shallots or omit
  • 2 cloves garlic, minced or ½ tsp garlic powder
  • 2 cups cooked white rice leftover rice helps prevent mushiness
  • 1 can (10.5 oz) cream of mushroom soup can substitute with cream of chicken soup
  • ½ cup milk or beef broth choose milk for creaminess or broth for flavor
  • 2 cups shredded cheddar cheese divided; add Monterey Jack or Colby for creaminess
  • 1 teaspoon paprika smoked paprika for enhanced flavor
  • salt and pepper to taste adjust according to other ingredients
For Garnish
  • chopped parsley for color and freshness (optional)

Method
 

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
  2. In a large skillet over medium heat, cook the ground beef and diced onion for 5–7 minutes until browned, then drain excess fat.
  3. Add minced garlic and cook for an additional 30 seconds.
  4. In a separate bowl, combine cream of mushroom soup, milk or beef broth, paprika, salt, and pepper; whisk until smooth.
  5. In the greased baking dish, combine cooked rice, beef mixture, half of the shredded cheddar cheese, and sauce; mix until coated.
  6. Sprinkle remaining cheddar cheese on top and cover with aluminum foil.
  7. Bake for 20 minutes, then remove foil and bake for an additional 10 minutes until cheese is bubbly.
  8. For an optional crispy top, broil for 2 minutes, watching closely to prevent burning.
  9. Let cool for a few minutes, then garnish with parsley before serving.

Notes

Make sure your rice is cooked and cooled before adding it to the casserole. You can assemble the dish a day in advance and refrigerate it before baking.
