- In a large mixing bowl, sift together all-purpose flour, baking soda, and salt. Set aside.
- In a stand mixer, beat together unsalted butter, brown sugar, and white sugar on medium speed for 2 minutes.
- Mix in creamy peanut butter and vanilla extract. Add eggs one at a time, mixing until incorporated.
- Gradually add dry mixture to the wet mixture, stirring until just combined. Stir in mini chocolate chips.
- Cover the bowl with plastic wrap and chill the dough in the refrigerator for at least 2 hours.
- Preheat your oven to 350°F (175°C) and prepare baking sheets with parchment paper. Scoop out dough onto the sheets.
- Bake for 13-16 minutes, until edges are lightly golden and centers are soft. Allow to cool on sheets for 4 minutes.
