  • 8 ounces Sliced Mushrooms Frozen works if thawed and drained.
  • 4 ounces Fresh Baby Spinach Frozen can be substituted.
  • 2 teaspoons Weber Herb and Garlic Seasoning Any herb blend can be used.
  • 2 cups Shredded Mozzarella Cheese Dairy-free cheese can be used.

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C) and grease a 13x9 inch baking dish with olive oil.
  2. Arrange the thin-sliced chicken breasts in the baking dish and season with salt, pepper, and Weber Herb and Garlic Seasoning.
  3. Heat olive oil in a large skillet over medium heat and sauté the sliced mushrooms for about 5-7 minutes.
  4. Layer the sautéed mushrooms evenly over the chicken, then add the fresh baby spinach on top.
  5. In a bowl, mix together the green onion cream cheese, chicken broth, and olive oil until smooth. Pour it over the layered chicken, mushrooms, and spinach.
  6. Cover the dish loosely with aluminum foil and bake for 20 minutes.
  7. Remove the foil and bake for an additional 20 minutes until bubbly and browned on top.
  8. Sprinkle shredded mozzarella cheese on top and return to the oven for another 5-10 minutes until the cheese is melted.
  9. Let the casserole sit for a few minutes before serving.
