Method
 

Preparation
  1. Start by patting your ribeye or sirloin steaks dry with paper towels; drizzle olive oil over both sides.
  2. Generously season with kosher salt, black pepper, garlic powder, and smoked paprika, pressing the spices into the meat.
  3. In a mixing bowl, combine parsley, minced garlic, oregano, red pepper flakes, red wine vinegar, and slowly whisk in olive oil.
  4. Preheat your grill or cast-iron skillet over medium-high heat for about 5 minutes.
  5. Grill the steaks for about 4-5 minutes on one side, then flip and cook for another 4-5 minutes for medium-rare.
  6. Allow the grilled steaks to rest for 5 minutes before slicing against the grain.
  7. Generously spoon chimichurri sauce over the sliced steak and serve on a warm platter.
