- Pat the pork shoulder dry and season with salt, pepper, paprika, and cinnamon. Refrigerate for up to 24 hours.
- Preheat the oven to 325°F. Heat oil in a Dutch oven and sear the pork on all sides for 4-5 minutes until browned.
- Sauté onion wedges in the same pot for 5-7 minutes until browned. Add garlic and cook for 1 minute.
- Pour in cider, broth, and vinegar, scraping the bottom to lift flavorful bits adding depth to the sauce.
- Return the pork to the pot, add bay leaves, thyme, and rosemary, cover, and braise in the oven for 2 hours.
- After 2 hours, uncover and baste the pork, braising for an additional 45 minutes to 1 hour until tender.
- Let the pork rest for 15 minutes, then shred. Simmer remaining sauce for a glossy finish and serve.
