Cooking Steps
- In a large pot, heat 2 tablespoons of olive oil over medium heat until shimmering. Add 1 diced onion and 2 minced garlic cloves, cooking for about 3-4 minutes until translucent.
- Stir in a 14.5-ounce can of diced tomatoes and 4 cups of broth, bringing to a boil. Reduce heat and let simmer for about 5 minutes.
- Add 2 cups of shredded or diced cooked chicken, stirring gently. Simmer on low for an additional 10-15 minutes.
- While simmering, boil 1 cup of orzo pasta in a separate pot for 8-10 minutes until al dente, then drain.
- Just before serving, stir in the cooked orzo. Adjust seasoning with salt and pepper to taste.
- For optional add-ins, stir in fresh spinach or kale and heavy cream, known for enhancing richness.
