- Prepare the vegetables by washing and peeling the sweet potatoes, then cutting into cubes. Dice the red bell pepper and sweet onion, and mince the garlic.
- Combine diced sweet potatoes, bell pepper, onion, and garlic in the crock pot. Add rinsed black beans, fire-roasted tomatoes, and vegetable broth. Sprinkle with chili powder, Mexican seasoning, salt, and pepper, then stir.
- Cover the crock pot and set to low, cooking for 6 to 8 hours or high for 3 to 4 hours until sweet potatoes are tender.
- About 30 minutes before serving, taste and adjust seasonings if necessary.
- Serve in bowls, topping with cilantro, lime, and avocado.
