  • 1 can (14.5 oz) Canned Fire Roasted Tomatoes preferred for authenticity; any canned tomatoes can be used
  • 1 tablespoon Chili Powder or substitute with cayenne for more heat
  • 1 tablespoon Mexican Seasoning Blend or create a DIY blend using cumin, paprika, and oregano
  • 4 cups Vegetable Broth low-sodium chicken broth can be used for a non-vegetarian version
  • Salt and Pepper to taste

  • Cilantro for freshness
  • Lime wedges for squeezing
  • Avocado diced for creaminess

Step-by-Step Instructions
  1. Prepare the vegetables by washing and peeling the sweet potatoes, then cutting into cubes. Dice the red bell pepper and sweet onion, and mince the garlic.
  2. Combine diced sweet potatoes, bell pepper, onion, and garlic in the crock pot. Add rinsed black beans, fire-roasted tomatoes, and vegetable broth. Sprinkle with chili powder, Mexican seasoning, salt, and pepper, then stir.
  3. Cover the crock pot and set to low, cooking for 6 to 8 hours or high for 3 to 4 hours until sweet potatoes are tender.
  4. About 30 minutes before serving, taste and adjust seasonings if necessary.
  5. Serve in bowls, topping with cilantro, lime, and avocado.
