Method
 

Step-by-Step Instructions
  1. Fill a large pot with water, add a pinch of salt, and bring to a boil. Add 8 ounces of uncooked penne pasta and cook according to package instructions, about 10-12 minutes, until al dente.
  2. Reserve about 1 cup of the starchy pasta water before draining, then drain the pasta and return it to the pot.
  3. With the pot off the heat, add 1 package of Boursin cheese and a splash of reserved pasta water, stirring gently to combine.
  4. Fold in 2 cups of fresh baby spinach, stirring until wilted and fully incorporated.
  5. Taste and adjust seasoning with salt and pepper, mixing well.
  6. Serve hot in bowls, garnished with fresh herbs or extra cheese if desired.
