  • 40 g Grass Fed Butter 25g for cooking + 15g for the sauce.
For the Rice
  • 2 cups Uncooked Long-Grain Rice Day-old rice preferable.
  • 1 medium Red Onion Sautéed for sweetness.
  • 4-5 cloves Garlic Chopped.
For the Creamy Sauce
  • 250 ml Milk Dairy-free alternatives available.
  • 150 g Light Cream Cheese Dairy-free option available.
  • 40 g Parmesan Can substitute with cheddar.
  • Fresh Parsley For garnish.

Method
 

Cooking Instructions
  1. Marinate the chicken breasts in olive oil and Cajun seasoning. Cover and refrigerate for at least 30 minutes.
  2. Heat a skillet over medium-high heat, add grass-fed butter, and sear marinated chicken for 6-7 minutes on each side until golden brown.
  3. In the same skillet, add remaining butter, followed by chopped red onion and minced garlic. Sauté for 3-4 minutes until soft.
  4. Add uncooked long-grain rice to the skillet, stirring to coat with the onion and garlic. Cook for 2-3 minutes.
  5. Lower heat to medium-low, whisk in milk, stirring until thickened. Add light cream cheese and Parmesan, whisk until smooth.
  6. Serve Cajun-infused rice onto plates, top with sliced chicken, drizzle with creamy sauce, and garnish with parsley.
