  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 2 cups Potatoes, diced Yukon Gold or Russet
  • 4 cups Chicken Broth
For the Creamy Mixture
  • 1 cup Heavy Cream
  • 2 cups Cheddar Cheese, shredded Plus more for topping
  • 2 cups Cooked Ham, diced
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper

Method
 

Cooking Steps
  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for another minute until fragrant.
  3. Add diced potatoes and chicken broth; bring to a boil. Reduce heat and let simmer until potatoes are tender, about 15 minutes.
  4. Pour in heavy cream and bring to a gentle simmer. Stir in the shredded cheese until melted and smooth.
  5. Add diced ham, thyme, salt, and pepper. Stir well and let simmer for an additional 5 minutes.
  6. Remove from heat and let cool for about 10 minutes before serving. Garnish with additional cheese if desired.
