  • 1 can Sweet Corn drained
  • 1 can Black Beans drained and rinsed
  • 1 can Rotel Tomatoes or diced tomatoes with green chilies
  • 1 Bell Pepper diced
  • 1 cup Shredded Cheddar Cheese or Pepper Jack for heat
  • 2 cups Fritos
For the Dressing
  • 1 cup Sour Cream or Greek yogurt
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Ground Cumin

Method
 

Main Instructions
  1. In a small bowl, whisk together sour cream, extra virgin olive oil, salt, black pepper, garlic powder, onion powder, and ground cumin until smooth and creamy.
  2. In a large mixing bowl, add the drained sweet corn, black beans, Rotel tomatoes, diced bell pepper, and shredded cheddar cheese. Gently toss until evenly distributed.
  3. Pour the prepared dressing over the salad mixture and fold in gently to coat all ingredients.
  4. Just before serving, add the Fritos to the salad and fold in gently to maintain their crunchiness.
  5. Optionally, garnish with extra Fritos, a sprinkle of shredded cheddar, or fresh cilantro before serving.
