  • 1 cup cherry tomatoes halved
  • 2 cups fresh baby spinach or kale
  • 1 tbsp dried Italian seasoning or herbs de Provence
  • 1 tsp paprika smoked paprika optional
  • 1/2 tsp crushed red pepper flakes optional
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup heavy cream or coconut cream
  • 4 oz cream cheese softened
  • 1/2 cup grated Parmesan cheese
For the Topping
  • 1 cup shredded mozzarella cheese or fresh mozzarella
  • 1/4 cup fresh parsley chopped

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and lightly grease a medium baking dish with olive oil.
  2. In a skillet over medium heat, add olive oil and minced garlic, sauté for about 1 minute until fragrant.
  3. Stir in halved cherry tomatoes and baby spinach, cooking for 2–3 minutes until spinach wilts and tomatoes soften.
  4. Lower the heat and pour in heavy cream, cream cheese, Parmesan cheese, Italian seasoning, paprika, and optional red pepper flakes. Simmer for 3–4 minutes until thickened.
  5. Arrange shrimp in the baking dish and season with salt and black pepper.
  6. Pour the cream sauce over the shrimp, gently tossing to coat.
  7. Sprinkle shredded mozzarella cheese over the top.
  8. Bake uncovered for 12–15 minutes until shrimp are pink and cheese is bubbly and golden.
  9. Garnish with chopped parsley and serve hot.
