Step-by-Step Instructions
  1. In a large skillet over medium-high heat, add olive oil and sauté the diced pancetta for 5–7 minutes until golden and crispy.
  2. Reduce heat to medium, add minced garlic, and sauté for 30 seconds until fragrant.
  3. Mix in peas and cook for 2-3 minutes to warm them up.
  4. Lower the heat and pour in cream, simmering for 2–3 minutes until slightly bubbling.
  5. Add finely grated Parmesan cheese, mixing until melted. Season with black pepper and lemon juice.
  6. Add cooked pasta and ¼ cup reserved pasta water, tossing to coat for 1-2 minutes.
  7. Fold in arugula (optional) and serve garnished with extra Parmesan cheese and lemon zest.
