For the Sauce
  • 1 packet Ranch seasoning mix In a pinch, ranch dressing can be used.
  • 1 can Cream of chicken soup For a dairy-free option, use non-dairy cream of chicken.
  • 1 cup Chicken broth Low-sodium preferred.
  • 1 cup Sour cream Can swap for cream cheese for a thicker sauce.
  • 1 teaspoon Garlic powder Fresh garlic can be used.
  • 1 teaspoon Onion powder Fresh onion works, sauté first.
  • 1/2 teaspoon Black pepper Adjust to taste.
Optional Add-ins
  • 2 tablespoons Olive oil Used for optional searing.
  • 1 cup Shredded cheddar cheese Varieties like Monterey Jack work beautifully.
  • 1/4 cup Fresh parsley For garnish.

Equipment

  • Crock Pot

Method

Step-by-Step Instructions
  1. If you choose to enhance flavor, heat a skillet over medium heat and add a drizzle of olive oil. Sear the boneless, skinless chicken breasts for 2-3 minutes on each side until golden-brown.
  2. In your Crock Pot, whisk together the cream of chicken soup, ranch seasoning mix, chicken broth, garlic powder, onion powder, and black pepper until smooth.
  3. Carefully place the seared (or raw) chicken breasts into the mixture in the Crock Pot and ensure they are fully submerged.
  4. Cover the Crock Pot with the lid and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender.
  5. Once cooking is complete, remove the chicken and shred it with two forks. Return the shredded chicken to the pot.
  6. Stir in the sour cream and mix thoroughly until creamy. Allow to warm slightly for the flavors to meld.
  7. Optionally sprinkle shredded cheddar cheese and fresh parsley on top before serving.
