- Cook the pasta by boiling salted water. Add jumbo shells and cook for 10-12 minutes until al dente. Drain and rinse with cold water. Set aside.
- In a saucepan, melt butter and olive oil. Add minced garlic and sauté for 1 minute until fragrant.
- Stir in cream cheese until melted, then whisk in heavy cream, Parmesan, herbs, lemon zest, salt, and pepper. Cook for 3-5 minutes until thickened.
- In a bowl, combine crab, shrimp, ricotta, mozzarella, and ¼ cup of the creamy sauce. Mix well and season to taste.
- Stuff each shell with seafood filling. Place in a greased baking dish, ensuring they're evenly spaced.
- Pour remaining sauce over shells and sprinkle with additional Parmesan cheese.
- Preheat oven to 375°F (190°C). Cover and bake for 20 minutes; uncover and bake for an additional 10 minutes until golden brown.
- Let cool for a couple of minutes, garnish with parsley, and serve warm.
