Step-by-Step Instructions
  1. Bring a large pot of salted water to a rolling boil. Add gluten-free fettuccine and cook according to package instructions until al dente, about 8-10 minutes. Reserve a cup of pasta water, then drain pasta and set aside.
  2. In a large skillet, heat a tablespoon of oil from sun-dried tomatoes over medium heat. Add minced garlic and sun-dried tomatoes, sauté for about 2 minutes until fragrant.
  3. Stir in Italian seasoning, balsamic vinegar, and tomato paste. Cook for 2-3 minutes, allowing mixture to caramelize slightly.
  4. Add halved fresh cherry tomatoes and a splash of reserved pasta water. Cover and simmer for about 3-4 minutes, mashing tomatoes gently.
  5. Pour in canned coconut milk and sprinkle nutritional yeast. Stir to combine, simmer for another 5-10 minutes until thickened.
  6. Add drained gluten-free fettuccine to the skillet. Toss to coat in sauce. Fold in baby arugula until just wilted.
  7. Serve garnished with chopped parsley and optional vegan parmesan.
