- Preheat your oven to 350℉ (175℃) and line two baking sheets with parchment paper.
- In a large mixing bowl, whisk together the eggs until frothy, then add in chopped dandelion greens, shredded butternut squash, almond flour, sea salt, minced shallots, and minced garlic. Stir until combined.
- Scoop out about ¼ cup of the fritter mixture and flatten it to form patties. Place them on the prepared baking sheets.
- Lightly brush the tops of each fritter with extra-virgin olive oil and bake for 15 minutes. Flip the fritters and bake for an additional 12 minutes.
- Mix together the goat yogurt and lemon juice in a small bowl, adjusting the seasoning.
- Once the fritters are golden-brown, serve them hot with the yogurt dip and garnish with chopped chives.
