Step-by-Step Instructions
  1. Preheat your oven to 350℉ (175℃) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, whisk together the eggs until frothy, then add in chopped dandelion greens, shredded butternut squash, almond flour, sea salt, minced shallots, and minced garlic. Stir until combined.
  3. Scoop out about ¼ cup of the fritter mixture and flatten it to form patties. Place them on the prepared baking sheets.
  4. Lightly brush the tops of each fritter with extra-virgin olive oil and bake for 15 minutes. Flip the fritters and bake for an additional 12 minutes.
  5. Mix together the goat yogurt and lemon juice in a small bowl, adjusting the seasoning.
  6. Once the fritters are golden-brown, serve them hot with the yogurt dip and garnish with chopped chives.
