- Heat 1 tablespoon of oil in a large skillet over medium heat. Add chopped onions and sauté until tender and translucent, about 2-3 minutes.
- Add ground beef to the skillet, breaking it apart as it cooks. Stir until browned, which should take about 4-5 minutes. Mix in tomato paste, taco seasoning, and water or beef broth. Cook for an additional 3-4 minutes.
- Lay a flour tortilla on your work surface. Add 1.5-2 tablespoons of shredded mozzarella cheese, followed by a spoonful of beef filling. Top with more cheese, fold the tortilla, and press to seal.
- In a clean skillet, heat 3-4 tablespoons of oil until hot. Place assembled tacos in the skillet, frying for about 1 minute on each side until golden brown.
- Once cooled slightly, sprinkle with fresh cilantro and serve hot with a favorite dipping sauce.
