Method
 

Step-by-Step Instructions
  1. Cut a 1 lb block of mozzarella into thick sticks, about 3 inches long and ½ inch thick.
  2. Set up a three-bowl assembly line with flour in the first, whisked eggs in the second, and a breadcrumb mixture in the third.
  3. Coat each stick in flour, dip into eggs, and roll in the breadcrumb mixture, repeating for double coating.
  4. Freeze the breaded sticks for 20-25 minutes to firm them up.
  5. Heat 2 inches of avocado oil in a deep pot to 375°F and fry the sticks for 1-2 minutes until golden brown.
  6. Melt butter in a saucepan, whisk in cayenne, sugar, paprika, garlic powder, chili powder, hot sauce, and salt for the glaze.
  7. Drain fried sticks on a wire rack, then dip in the hot glaze and serve immediately.
