Filling
  • 3 cups Honeycrisp Apples Peeled and cubed
  • 2 tablespoons Unsalted Butter Room temperature
  • 1/2 cup Light Brown Sugar
  • 1 teaspoon Ground Cinnamon
  • 1 pinch Fine Salt
  • 1 tablespoon Cornstarch Mixed with 2 tablespoons water to make a slurry
Dough
  • 4 cups All-Purpose Flour
  • 2 teaspoons Instant Dry Yeast
  • 1 teaspoon Fine Salt
  • 1 cup Whole Milk Warm
  • 1/3 cup Unsweetened Applesauce
  • 1/3 cup Granulated Sugar
Icing
  • 4 ounces Cream Cheese
  • 2 tablespoons Unsalted Butter Softened
  • 1/4 cup Cooled Caramel Sauce
  • 1 teaspoon Vanilla Extract
  • 1 pinch Salt
  • 2 cups Powdered Sugar
Caramel Sauce
  • 1 cup Granulated Sugar
  • 1/2 cup Heavy Cream
  • 6 tablespoons Unsalted Butter

Method
 

Prepare
  1. Peel and cube the Honeycrisp apples. Melt butter, add apples, brown sugar, cinnamon, and salt. Cook until tender and bubbling, then add cornstarch slurry. Chill.
  2. Mix flour, yeast, and salt. Heat milk, applesauce, and sugar, then combine with dry ingredients. Knead until elastic and let rise.
  3. Roll the dough, spread butter, layer filling, cut into strips, and shape rolls. Place in greased pan.
  4. Cover the rolls and let rise in a warm place for 30 minutes.
  5. Preheat oven to 350°F (175°C). Bake for 28-34 minutes until golden.
  6. Make caramel sauce by dissolving sugar until amber, whisk in cream and butter. Cool slightly.
  7. Beat cream cheese, butter, caramel, vanilla, and salt. Gradually add powdered sugar.
  8. Cool rolls briefly, drizzle with icing and remaining caramel sauce. Serve warm.
