Baking
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a mixing bowl, whisk together the dry ingredients: flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, combine the sugars, oil, eggs, coffee, milk, and vanilla; mix until smooth.
- Gradually add the dry mixture to the wet mixture, stirring until just combined.
- Spoon the batter into the lined muffin cups, filling each about ⅔ full.
- Bake for 18–20 minutes or until a toothpick comes out clean; let cool in the pan for 5 minutes.
- Whip together the filling ingredients until stiff peaks form and transfer to a piping bag.
- Once cooled, core the cupcakes and fill each with the coffee cream.
- Heat the heavy cream for the ganache, pour it over chopped dark chocolate and stir until smooth.
- Spoon the ganache over the filled cupcakes and let it set before serving.
