Ingredients
  

For the Crust
  • 1 cup crushed ladyfingers Can substitute with graham crackers.
  • 4 tablespoons unsalted butter Melted.
For the Cheesecake Filling
  • 8 ounces cream cheese Room temperature.
  • 8 ounces mascarpone cheese Room temperature.
  • 1 cup granulated sugar Can use brown sugar.
  • 3 large eggs At room temperature.
  • 1 teaspoon vanilla extract Use pure for best flavor.
  • 1/4 cup coffee liqueur Can replace with cooled strong coffee.
  • 1 cup strong brewed coffee Can use decaf.
  • 1 cup heavy whipping cream Can use half-and-half for a denser texture.
  • 1 pinch salt
For the Topping
  • 2 tablespoons unsweetened cocoa powder For dusting.
  • 2 tablespoons grated dark chocolate For garnish.

Method
 

Baking Instructions
  1. Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan with unsalted butter.
  2. In a mixing bowl, combine crushed ladyfingers and melted butter; press into the bottom of the pan.
  3. Beat cream cheese and mascarpone with sugar until smooth and creamy.
  4. Incorporate eggs one at a time on low speed; mix until just combined.
  5. Stir in vanilla extract, coffee liqueur, brewed coffee, and salt until well combined.
  6. Whip heavy cream to soft peaks and gently fold it into the cheese mixture.
  7. Pour the cheesecake filling over the crust and smooth the top with a spatula.
  8. Bake for 45-55 minutes until edges are set and center jiggles slightly.
  9. Cool in the oven with the door cracked for about 1 hour.
  10. Refrigerate for at least 4 hours, or overnight for best flavor.
  11. Before serving, dust with cocoa powder and sprinkle grated dark chocolate on top.
