  • 3 tablespoons Shaoxing Wine (or Dry Sherry) Enhances overall flavor
  • 4 tablespoons Soy Sauce Saltiness and flavor
  • 2 tablespoons Sugar Balances flavors
  • 1 tablespoon Molasses Optional for sweetness
  • 3 cloves Garlic Minced
  • 1 teaspoon Five Spice Powder Optional but recommended
  • 1 teaspoon Red Food Coloring Optional for coloring
  • 4 tablespoons Maltose (or Honey) For a glossy glaze
For the Glaze
  • 1 cup Reserved Marinade From marinating step

Instructions
  1. Marinate the Pork: Cut the pork shoulder into 2-inch strips and combine marinade ingredients, reserving some for the glaze. Marinate in a sealed bag for at least 6 hours or overnight.
  2. Prepare the Glaze: Heat reserved maltose and combine with reserved marinade and water in a bowl for a smooth consistency.
  3. Air Frying the Pork: Preheat air fryer to 400°F (200°C). Brush pork strips with the glaze, cook for 12-16 minutes, flipping every 3-4 minutes until caramelized.
  4. Serve the Char Siu Pork: Allow to rest for a few minutes, slice into pieces, and serve over rice or as an appetizer.
