- Marinate the Pork: Cut the pork shoulder into 2-inch strips and combine marinade ingredients, reserving some for the glaze. Marinate in a sealed bag for at least 6 hours or overnight.
- Prepare the Glaze: Heat reserved maltose and combine with reserved marinade and water in a bowl for a smooth consistency.
- Air Frying the Pork: Preheat air fryer to 400°F (200°C). Brush pork strips with the glaze, cook for 12-16 minutes, flipping every 3-4 minutes until caramelized.
- Serve the Char Siu Pork: Allow to rest for a few minutes, slice into pieces, and serve over rice or as an appetizer.
