Ingredients
  

For the Salad
  • 8 ounces Rotini Pasta Can substitute with other short noodles.
  • 1 can Black Beans Drained and rinsed.
  • 1 cup Corn Canned, frozen, or fresh (cooked).
  • 2 cups Fresh Spinach Can use other greens like kale.
  • ¼ cup Fresh Cilantro Can substitute with parsley.
For the Dressing
  • 1 cup Full Fat Plain Greek Yogurt Low-fat or non-dairy options are alternatives.
  • 2 tablespoons Extra Virgin Olive Oil
  • 2 cloves Minced Garlic Adjust to taste.
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked Paprika
  • 1 tablespoon Sugar
  • ½ teaspoon Salt Adjust to taste.
  • 2 limes Limes Juiced.

Method
 

Cooking and Combining
  1. Cook the rotini pasta in salted boiling water as per package instructions (8-10 minutes) and then rinse under cold water to cool.
  2. In a mixing bowl, combine Greek yogurt, olive oil, minced garlic, cumin, smoked paprika, sugar, salt, and lime juice. Whisk until smooth.
  3. Add cooled pasta, black beans, corn, spinach, and cilantro to the dressing. Gently fold to combine.
  4. Adjust seasoning to taste with salt, pepper, or lime juice.
  5. Serve immediately or cover and chill in the refrigerator for at least 30 minutes before serving.
