Cooking and Combining
- Cook the rotini pasta in salted boiling water as per package instructions (8-10 minutes) and then rinse under cold water to cool.
- In a mixing bowl, combine Greek yogurt, olive oil, minced garlic, cumin, smoked paprika, sugar, salt, and lime juice. Whisk until smooth.
- Add cooled pasta, black beans, corn, spinach, and cilantro to the dressing. Gently fold to combine.
- Adjust seasoning to taste with salt, pepper, or lime juice.
- Serve immediately or cover and chill in the refrigerator for at least 30 minutes before serving.
