Ingredients
  

For the Pasta
  • 8 ounces Short Pasta (Rotini or Fusilli) Holds dressing well
For the Vegetables
  • 2 cups Fresh Broccoli Chopped into bite-sized florets
  • 1 small Red Onion Diced; green onions can be used
For the Dressing
  • 1 cup Mayonnaise Can substitute with plain yogurt
  • 2 tablespoons Red Wine Vinegar Any vinegar can work
  • 1 tablespoon Sugar Can substitute with honey or agave syrup
  • to taste Salt For seasoning
  • to taste Pepper For seasoning
For the Topping
  • 4 slices Bacon Can substitute with sunflower seeds for vegetarian

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil and cook the pasta until al dente, about 8 to 10 minutes. Drain and rinse under cold water.
  2. While the pasta cools, wash and chop the broccoli, dice the red onion, and cook the bacon in a skillet until crispy.
  3. In a mixing bowl, combine mayonnaise, red wine vinegar, and sugar. Season with salt and pepper, mixing until smooth.
  4. In a large bowl, combine the cooled pasta, the dressing, broccoli, and red onion. Mix gently but do not add bacon yet.
  5. Cover and refrigerate for at least 3 hours.
  6. Just before serving, fold in the crispy bacon.
