Step‑by‑Step Instructions for Healthy Street Corn Chicken Bowl
  1. Cut the two large chicken breasts into uniform bite-sized cubes and prepare the corn.
  2. Heat 2 tablespoons of olive oil or avocado oil in a large skillet over medium heat until it shimmers.
  3. Add the cubed chicken to the skillet, season with salt, pepper, smoked paprika, chili powder, and garlic powder, and sauté for about 8-10 minutes until golden brown.
  4. Stir in the corn kernels and cook for an additional 2-3 minutes.
  5. In a bowl, mix 0.5 cup of Greek yogurt, 1 tablespoon of mayonnaise, 1 minced garlic clove, lime juice and zest, and 1 tablespoon of chopped cilantro until smooth.
