  • 1 each Chili (Optional) use fresh for a spicier punch

Method
 

Step-by-Step Instructions
  1. Prepare the marinade by whisking olive oil, lemon juice, vinegar, minced garlic, smoked and sweet paprikas, oregano, salt, and pepper in a large mixing bowl.
  2. Marinate the chicken in a large bowl or zip-top bag, pouring the marinade over it and refrigerating for at least 4 hours, ideally overnight.
  3. Preheat your grill to medium-high heat (400°F to 450°F) about 20 minutes before grilling.
  4. Prepare the chicken for grilling by removing it from the marinade and patting it dry.
  5. Grill the chicken skin-side down for 5-6 minutes, then flip and grill for an additional 5-8 minutes.
  6. Check for doneness with a meat thermometer, ensuring the internal temperature reaches 165°F (75°C).
  7. Rest the chicken for about 5 minutes before serving, optionally garnished with fresh herbs and lemon wedges.
