  • 4 cups Rhubarb Trimmed and chopped, fresh or frozen without thawing
  • 1 box Strawberry Gelatin Preferably Jell-O brand
  • 1 cup Sugar
  • 1 box Yellow Cake Mix Gluten-free if needed
  • 1/2 cup Butter Melted and cooled
  • 1 cup Cold Water
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon Salt

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  2. Evenly spread the trimmed and chopped rhubarb along the bottom of the baking dish.
  3. Sprinkle the strawberry gelatin and granulated sugar evenly over the rhubarb.
  4. Pour the yellow cake mix over the gelatin and sugar layers without mixing.
  5. Whisk together the melted butter, cold water, vanilla extract, and a pinch of salt, then pour it evenly over the cake mix.
  6. Bake for 45 to 60 minutes until the top is golden brown and the center is set but slightly jiggly.
  7. Allow to cool at room temperature for 15-20 minutes before serving.
