Step‑by‑Step Instructions for Snickerdoodle Banana Bread
  1. Preheat your oven to 350°F (175°C). Grease your loaf pans generously with cooking spray or a bit of oil.
  2. In a small bowl, combine ½ cup of sugar with 2 teaspoons of ground cinnamon and mix well.
  3. In a large mixing bowl, combine ¾ cup sugar, ½ cup oil, 3 tablespoons sour cream, and 2 large eggs. Whisk until well incorporated. Fold in 3 mashed ripe bananas, 1 teaspoon baking soda, ½ teaspoon salt, and 2 cups all-purpose flour until just combined.
  4. Sprinkle a thin layer of the cinnamon sugar mixture at the bottom of each greased loaf pan. Pour half of the batter, sprinkle another layer of cinnamon sugar, then pour the remaining batter and top with the last of the cinnamon sugar.
  5. Bake mini loaves for about 30 minutes and the large loaf for 60 minutes. Check for doneness with a toothpick inserted in the center.
  6. After removing from the oven, allow to cool in the pans for about 10 minutes before transferring to a wire rack to cool completely.
