Preparation Steps
  1. In a mixing bowl, combine 8 ounces of softened cream cheese with 1/2 cup of sour cream or Greek yogurt. Blend until smooth.
  2. Incorporate 1 cup of shredded cheese and season with garlic powder, onion powder, salt, and black pepper. Mix until well-combined.
  3. Fold in 1 cup of finely diced bell peppers, 1/2 cup of shredded carrots, 1/4 cup of chopped green onions, and 1/2 cup of chopped spinach.
  4. Spread the vegetable filling on tortillas, leaving a small border. Roll tightly from the short edge.
  5. Wrap rolled tortillas in plastic wrap and refrigerate for at least 30 minutes.
  6. Slice the chilled roll-ups into 1-inch pinwheels and arrange on a platter.
