Step-by-Step Instructions
  1. Prepare ingredients by cutting chicken breasts into bite-sized cubes and removing corn kernels from the cob if using fresh corn.
  2. In a large skillet, heat the olive or avocado oil over medium heat, add chicken, and season with salt, pepper, smoked paprika, chili powder, and garlic powder. Cook for 6-8 minutes until cooked through.
  3. Stir in the corn kernels into the skillet and warm them for 2-3 minutes.
  4. In a separate bowl, whisk together Greek yogurt, mayonnaise, minced garlic, lime juice, lime zest, and cilantro until smooth.
  5. Remove skillet from heat, add cooked rice, and squeeze half a lime juice over; mix gently.
  6. Serve by spooning the chicken, corn, and rice into bowls, garnish with red onion and cilantro, and drizzle the lime sauce on top.
