Ingredients
  

For the Cake
  • 200 g Soft Margarine or Butter at room temperature
  • 200 g Soft Light Brown Sugar or dark brown/muscovado as substitutes
  • 3 large Eggs
  • 200 g Self-Raising Flour do not substitute with all-purpose flour
  • 1 tsp Baking Powder
  • 2 tsp Instant Coffee Powder do not replace with ground coffee beans
  • 1 pinch Salt to enhance flavor
  • 100 g Chopped Walnuts can substitute with pecans
For the Coffee Drizzle
  • 100 g Caster Sugar
  • 100 ml Coffee (Espresso, Filter or Instant)
For the Buttercream
  • 100 g Butter softened
  • 200 g Icing Sugar
  • 1 tsp Vanilla Extract
  • 1 tbsp Boiling Water to dissolve instant coffee
  • 1 tbsp Milk to adjust consistency
For Decoration
  • 10 g Walnut Halves for garnish

Method
 

Step-by-Step Instructions for Coffee And Walnut Loaf Cake
  1. Preheat your oven to 180°C (160°C fan) and line a 2lb loaf tin with parchment paper.
  2. Beat together the soft margarine or butter and the light brown sugar until fluffy and pale, about 3-5 minutes.
  3. Sift in the self-raising flour, baking powder, instant coffee, and a pinch of salt, folding together gently.
  4. Carefully fold in the chopped walnuts ensuring even distribution throughout the batter.
  5. Pour the batter into your prepared loaf tin, smooth the top, and bake for 1 hour.
  6. Mix caster sugar and coffee together until dissolved, set aside while the cake bakes.
  7. Poke holes in the warm cake and brush the coffee mixture generously over it.
  8. Mix boiling water with instant coffee, then beat together softened butter and icing sugar. Gradually add coffee mixture.
  9. Once cooled, pipe or spread the buttercream over the cake and garnish with walnut halves.
