  • 2 cups Rhubarb Diced into small pieces
  • ½ cup Honey Or agave syrup for vegan option
  • 2 cups Still Water
  • A handful Basil Leaves Or rosemary as substitute
For Serving
  • 12 ounces Sparkling Water To top off each glass
  • As needed Ice Cubes For chilling

Method
 

Step-by-Step Instructions
  1. Wash and dice the rhubarb into small pieces, roughly 1 cm in size.
  2. In a medium saucepan, combine diced rhubarb, honey, still water, and basil leaves. Bring to a boil, then reduce heat and simmer for 12 minutes.
  3. Remove from heat and cool the rhubarb mixture for 10-15 minutes.
  4. Strain the cooled mixture through a fine mesh sieve into a large bowl, pressing down on the solids to extract syrup.
  5. In each glass, add about ½ inch of rhubarb syrup, then add ice cubes and top with sparkling water, stirring gently.
