  • 8 ounces White Chocolate High-quality with at least 30% cocoa butter.
  • 2 cups Heavy Whipping Cream Use dairy-free whipped cream for vegan option.
  • 8 ounces Cream Cheese Room temperature.
  • 1/2 cup Powdered Sugar Granulated sugar can be substituted.
For Garnishing
  • 1 cup Fresh Raspberries Can use mixed seasonal berries.
  • 1 tablespoon Caramel Sauce Optional drizzle.
  • Edible Flowers Optional.

Method
 

Crust Preparation
  1. Combine graham cracker crumbs and melted unsalted butter in a bowl until well blended. Press mixture into tartlet pans and refrigerate for 20 minutes.
Mousse Preparation
  1. Melt white chocolate using a double boiler, stirring until smooth. Let cool.
  2. Whip heavy whipping cream to soft peaks in a chilled bowl and set aside.
  3. Beat cream cheese and powdered sugar until smooth. Fold in melted chocolate and then whipped cream gently.
Assembling Tartlets
  1. Spoon or pipe mousse into crusts. Smooth tops and refrigerate for at least 30 minutes.
  2. Garnish with raspberries, drizzle caramel sauce, and add edible flowers if desired.
  3. Serve chilled.
