Step-by-Step Instructions
  1. In a saucepan over medium heat, combine 1 cup of sugar, 1 cup of water, and most of the fresh mint. Bring to a low boil, then simmer for 10 minutes until sugar dissolves. Gently press mint leaves against the pan to release flavor, then remove from heat and cool.
  2. Fill two large glasses (16 oz or more) with crushed ice to ensure the drink is refreshingly cold.
  3. Pour 1 cup of passion fruit juice into each glass filled with ice. Add 2-3 tablespoons of mint simple syrup to each glass.
  4. Pour 7.5 ounces of club soda into each glass. Stir gently to combine without disturbing the ice too much.
