- In a saucepan over medium heat, combine 1 cup of sugar, 1 cup of water, and most of the fresh mint. Bring to a low boil, then simmer for 10 minutes until sugar dissolves. Gently press mint leaves against the pan to release flavor, then remove from heat and cool.
- Fill two large glasses (16 oz or more) with crushed ice to ensure the drink is refreshingly cold.
- Pour 1 cup of passion fruit juice into each glass filled with ice. Add 2-3 tablespoons of mint simple syrup to each glass.
- Pour 7.5 ounces of club soda into each glass. Stir gently to combine without disturbing the ice too much.
- Garnish each glass with fresh mint and optional fruit slices for added color and taste.
