- Preheat the pan by heating 2 tablespoons of vegetable oil in a large pan or wok over medium-high heat for about 2 minutes until shimmering.
- Add 1 pound of thinly sliced beef sirloin to the pan, cooking undisturbed for 3–4 minutes until browned on one side, then stir for another minute until fully cooked. Remove beef from the pan.
- In the same pan, toss in 3 minced garlic cloves, 1 sliced bell pepper, 1 cup of broccoli florets, and 1 julienned carrot. Stir-fry for about 5 minutes until vegetables are tender-crisp.
- Incorporate 8 ounces of cooked egg noodles and the reserved beef into the pan. Stir thoroughly for 2 minutes.
- Pour in 2 tablespoons of soy sauce and 1 tablespoon of oyster sauce if desired. Mix 1 teaspoon of cornstarch with 2 teaspoons of water and add to the pan, stirring for about 2 minutes until sauce thickens.
- Adjust seasoning with salt and pepper. Garnish with freshly sliced green onions and serve immediately.
