Ingredients
  

For the Beef Mixture
  • 1 lb Ground Beef or ground turkey/chicken for a lighter option
  • 1 tbsp Olive Oil can replace with any cooking oil
  • 1 packet Taco Seasoning Mix homemade seasoning works well too
  • 1 cup Salsa medium or mild based on spice preference
  • 1 can Chili Beans pinto or kidney beans are good substitutes
For the Base
  • 1 bag Tortilla Chips opt for gluten-free if necessary
For the Toppings
  • 1 cup Sour Cream can substitute with Greek yogurt
  • 1 cup Black Olives use based on preference
  • 1 bunch Green Onions fresh garnishes
  • 1 cup Tomatoes diced, fresh garnishes
  • 2 cups Cheddar Cheese Colby Jack or Pepper Jack for extra kick

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and lightly coat a 9x13-inch baking dish with cooking spray.
  2. In a large skillet, heat a tablespoon of olive oil over medium-high heat. Add one pound of ground beef, breaking it apart as it cooks for 8-10 minutes until browned.
  3. Sprinkle taco seasoning mix and pour in salsa. Stir well and let it simmer for about 20 minutes.
  4. Stir in a can of chili beans and cook for an additional 5 minutes until heated through.
  5. Pour a layer of crushed tortilla chips into the bottom of the baking dish.
  6. Spoon the seasoned beef and bean mixture on top of the tortilla chips.
  7. Spread sour cream over the beef layer and top with black olives, green onions, and diced tomatoes.
  8. Generously sprinkle shredded cheddar cheese on top and bake for about 30 minutes until bubbly and golden.
  9. Let the casserole cool for 5 minutes before serving.
