Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. In a mixing bowl, combine the cooked shredded chicken with BBQ sauce until well coated.
  3. On the baking sheet, spread half of the tortilla chips in an even layer.
  4. Layer half of the BBQ chicken mixture over the tortilla chips evenly.
  5. Sprinkle half of the shredded cheese on top of the chicken layer.
  6. Repeat with the remaining tortilla chips, BBQ chicken mixture, and top with remaining cheese.
  7. Sprinkle pickled jalapeños and diced red onion over the nachos.
  8. Bake in the oven for 11-13 minutes until the cheese is melted and bubbly.
  9. Remove from oven and drizzle with queso blanco and extra BBQ sauce; return to oven for 3-4 minutes.
  10. Allow to cool slightly before serving, garnished with fresh cilantro.
