For the Tzatziki Sauce

  • 1 clove Garlic Minced; for flavor depth.
  • 1 tablespoon Lemon Juice Brightens the sauce.

Method
 

Marination and Preparation
  1. In a large bowl, combine olive oil, lemon juice, minced garlic, dried oregano, paprika, salt, and pepper. Add chicken pieces and coat well. Cover and refrigerate for at least 1 hour, up to 4 hours.
  2. Grate the cucumber and drain excess moisture in a dish towel. Combine with Greek yogurt, minced garlic, lemon juice, chopped dill, salt, and pepper. Refrigerate for at least 30 minutes.
  3. Soak wooden skewers in water for 30 minutes. Thread marinated chicken onto skewers, leaving space between pieces.
Cooking
  1. Preheat grill to medium-high, oil grates. Grill skewers for 12-15 minutes, turning every 3-4 minutes until internal temperature reaches 165°F (74°C).
  2. Remove from grill and let rest for 5 minutes. Serve hot with tzatziki sauce for dipping.
